Full disclosure – I’m a fairly new vegan. I’ve been doing this for about six months. The transition from vegetarian to vegan was rather easy, all except for the cheese. I missed cheese. Substitutes for eggs, milk, and other animal based foods were easy to find. But a good cheese substitute is a different story. Let’s be honest, the vegan cheese on the market just doesn’t taste that good and a pure vegan one is not easily found. I had to take matters into my own hands and begin the hunt for a good cheese recipe.
I scoured the web far and wide for one that could be applied to many-a-dish. And I eventually found this one from the “it doesn’t taste like chicken blog.” It’s a great recipe. And it only takes a few minutes to prepare / cook. I’ve used it with pizza, sandwiches, ziti, macaroni and cheese, and the list continues to grow.
Now – there is a secret ingredient, nutritional yeast. I had to order it on Amazon. It’s the special ingredient that gives it the cheesy flavor. The other thing I need to mention is that this recipe requires cashews. Some people might have nut allergy and will have to find a viable substitute.
My favorite part is that it’s extremely light. You won’t get “pizza belly” after eating it. To clarify – pizza belly is the yucky feeling you get after eating two slices of pizza from your local pizzeria. So check out the recipe. It’s a strong recommendation on my part and is the missing link for a lot of home-cooked vegan dishes.
