This is a great recipe that can be applied to many dishes. I use it in sandwiches, pizzas, as a dip, in short – anything that requires a bit of gooey cheese, including mac and cheese. It is not heavy and very easy to make. I’m in the habit of keeping some in the fridge at all times. Think of this as a mozzarella or or a white cheddar substitute. It is delicious and one of the best recipes I found on the web for cheese.
There is one thing I should note about this, the ingredients calls for something called nutritional yeast. I wasn’t familiar with it until I tried it in this recipe and it wasn’t easy to track down. It’s the special ingredient that provides the cheesy smell and taste. You can order on Amazon here.

This is a recipe from one of my favorite websites, The Minimal
ist Baker. It’s a simple recipe. The problem I had with it is that I can’t find the spelt flour she uses as an ingredient. Instead, I used 1 cup whole wheat flour and it works just fine. Like with any pancake, the add-ins are what make them fun. I’ve used dates (blended with soy milk) and blueberries. I cook these on my stove-top grill and it doesn’t take long at all to prep or cook. I strongly recommend this for light, fluffy vegan pancakes to start your day.
These are delicious, soft and very easy with very few ingredients. There isn’t much else to say about these. Try them out!
